Minted Mini Red Skin Potatoes

This pairs great with the sauteed lamb and grapes!

  1. Bring pot of lightly salted water to boil.
  2. Cut mini red skin potatoes in halves and add to salted water.
  3. Add two sprigs of fresh mint.
  4. Bring back up to boil for 20 minutes until potatoes are soft.
  5. Drain water and remove mint. Enjoy!
