Banana Pancakes

Such an easy recipe, you can add blue berries or any other fruit to this.  I have made a simple banana topping for this which can be found in my additional comments area 🙂  Enjoy!

  1. Smash two banana's with a fork, add sugar and vanilla and mash/mix again until combine.
  2. Add Flour, baking powder, a pinch of salt and cinnamon, toss with bananas.
  3. Add egg, milk vanilla and vegetable oil. Mix until flour is no longer showing thru and lumps are gone.
  4. Heat lightly oiled/buttered pan over a medium high heat. Pour or scoop the batter on the griddle using about 1/3 cup for each pancake. Cook until golden brown on both sides. (Tip: you can tell when the pancake is ready to flip by the edges of the pancake looking a bit dry and the pancake is no longer making bubbles)
