This is great with any beef leftovers.
- Dice 3 pealed red potatoes in to small cubes.
- Dice leftover beef in cubes the same size and the potatoes
- Remove the leaves from about 5 springs of thyme and chop finely.
- In a skillet place your olive oil, potatoes, beef and thyme and saute over a medium heat about 15 minutes until potatoes are a golden brown.
- In a separate pot bring lightly salted water to a boil.
- When a nice rolling boil is going gently drop in cracked eggs one at a time into the boiling water.
- Eggs should slightly float toward the top, about 5 minutes. Pull out with a slotted spoon.
- Place hash in bowl and pull out poached eggs with a slotted spoon.
