Poached Egg and Steak Hash

This is great with any beef leftovers.

  1. Dice 3 pealed red potatoes in to small cubes.
  2. Dice leftover beef in cubes the same size and the potatoes
  3. Remove the leaves from about 5 springs of thyme and chop finely.
  4. In a skillet place your olive oil, potatoes, beef and thyme and saute over a medium heat about 15 minutes until potatoes are a golden brown.
  5. In a separate pot bring lightly salted water to a boil.
  6. When a nice rolling boil is going gently drop in cracked eggs one at a time into the boiling water.
  7. Eggs should slightly float toward the top, about 5 minutes. Pull out with a slotted spoon.
  8. Place hash in bowl and pull out poached eggs with a slotted spoon.
